If you are thinking of a refreshing, light, and fruity dessert that will refresh you in seconds, check out our recipe for a refreshing juicy lemon cake that has such a delicate taste that it will brighten your day. At the first bite, you will feel the real taste of lemon, and if it survives for a few hours in the refrigerator to cool down well, you will be delighted with this incredibly refined taste.
Ingredients for the biscuit:
2 eggs
2 tablespoons sugar
6 tablespoons bite
3 tablespoons flour
4 tablespoons milk
3 tablespoons oil
half a baking powder
grated rind of whole lemon
Place the baking paper in a rectangular tray of medium dimensions and pour the whipped and well combined mixture over it. Turn the oven to 200°C for about 10 minutes and wait for the biscuit to turn brown.
During this time, you can prepare the whipped cream according to the instructions on the bag in one bowl, and the liquid topping is the second bowl of medium size.
The liquid topping requires:
120g sugar crystal
100ml of warm water
1 vanilla sugar
juice of whole lemon
Put all the liquid ingredients for the dressing in a saucepan and when it boils, leave it for another 5 minutes on the stove on medium heat, stirring constantly.. Stir often because bubbles form quickly and it could damage the hot plate.
When the biscuit is ready, remove the paper from the biscuit and return it to the tray, but with the bottom side of the biscuit facing upwards, this will enable the biscuit to absorb the topping better and the whipped cream not to slide.
So, apply the topping evenly over the biscuit and when the biscuit cools down a bit, spread the whipped cream.
Put in the fridge to cool well (it is most delicious when it stays overnight).
