Quick Zucchini Pie

Quick Zucchini Pie Recipe — Moist and Easy Cornbread-Style Bake

✅ Introduction:

Zucchini is an essential seasonal ingredient, and when we look for something quick, light, and practical, this zucchini pie in a moist cornbread style has stood out as one of our favorites — both among our readers and our team.

🥒Our editorial team tested a recipe where there’s no need to drain the zucchini, no dough layers, no frying or extra prep. Everything is mixed in one bowl and baked for about 20 minutes. The result? A moist, fragrant pie that can be enjoyed warm or cold — perfect for hot summer days.

🧪 We Tried the Viral No-Flour Zucchini Pie — Here's Why We Went Back to the Classic

Lately, we’ve seen a rise in “zucchini pies” made without any flour — just eggs, sour cream, and veggies. While they look appealing, the texture is more like a baked omelet than an actual pie, and it’s hard to stop at just one piece. They’re also not ideal for sharing or feeding a family. So after testing and comparing, we returned to a time-tested classic: zucchini, cheese, a bit of flour, and spices — mixed in one bowl and baked to perfection. The result is a dish that’s more filling, more practical, and always a crowd-pleaser.

👉 While the viral no-flour version may suit those following a low-carb diet, it usually needs an extra source of protein — like meat — to make it truly satisfying.

📋 Recipe: Moist Cornbread-Style Zucchini Pie

Ingredients:

  • 1 cup cornmeal

  • 1 cup wheat flour

  • 2 eggs

  • 1 baking powder

  • 1 cup sparkling water

  • ¾ cup oil

  • salt to taste

  • 200 g cow cheese (white cheese/feta)

  • 1 large (or 2 small) zucchini, grated with all its juice

Preparation:

Combine all ingredients in one bowl. There’s no need to drain the zucchini — its juice helps keep the pie soft and moist. Pour the mixture into a greased baking tray and bake at 220°C (430°F) for about 20 minutes, until golden brown.

➡️ For extra flavor, during testing we added a bit of smoked paprika and a pinch of seasoning C. Also, a spoonful of sour cream spread on top before baking gave the pie a particularly creamy texture.

➡️ If you prefer a crispy crust like we do, sprinkle some sesame seeds and cornmeal on top before baking.

➡️ For a more gourmet twist, you can mix in some smoked cheese like aged cheese, or add grated carrots if you’re aiming for a vitamin boost.

  • a light breakfast with tea or yogurt

  • a quick lunch paired with a seasonal salad

  • taking to work or a picnic, as it’s easy to pack and doesn’t crumble
